Ruth Caracter (Martinsen)

SIOUX CITY -- Ruth "Ruthie" Caracter, 79, of Sioux City passed away Sunday, Oct. 30, 2011, at her residence following a lengthy battle with cancer.
Services will be 6 p.m. today at Larkin Chapel, Christy-Smith Funeral Homes. Visitation will be 5 p.m. until service time today at the funeral home.
She was born in Esbjerg, Denmark, the daughter of Hans and Anna Martinsen. She came to the United States at the age of 23, on May 16, 1955. She then went to work four days later at Green Gables Restaurant in Sioux City. She was a pastry chef/baker at numerous restaurants including the Marina Inn, Hilton and Holiday Inn to name a few. Everyone who ever saw or ate her creations was amazed.
One of her proudest moments in her life was becoming a U.S. citizen on Sept. 12, 2008.
She married Eugene "Bun" Beck. She later married George Caracter, better known as "Chicken George".
She will always be remembered for her loving and giving heart as well as her baking skills. She was a member of the Y.M.C.A., where she did water aerobics. There she made many friends, who were so special to her.
Survivors include her brother, Olaf and Yrsa Martinsen of Esbjerg, Denmark; two daughters, Vicki and Carlos Baisden of Sioux City and Jodi Clayton of Hudson, Fla.; two nieces, Ann Martinsen and her friend, Henning of Denmark, and Pia and Johnny Sorensen of Denmark; a nephew, Hans and Betty Martinsen of Denmark; a grandson of Hudson; and three great-grandchildren.
She was preceded in death by her parents, Hans and Anna Martinsen; her husbands, George and Bun; and a grandson, Jason Ohrazda.
